Ingredients

2 cups gluten free flour
- 1 tsp baking powder
- 1 tsp salt
- ½ tsp baking soda
- 1 cup butter, softened
- 1 cup light brown sugar
- 1 cup granulated sugar
- 2/3 cup smooth peanut butter
- 2 tsps vanilla
- 2 eggs
- 2 cup LoveJoy Gourmet Granola, slightly crushed
- 1 cup cocktail peanuts, roughly chopped
- 1 cup sweetened flaked coconut
- 12 oz milk chocolate chips
Directions
How to Make It
- Preheat oven to 350 degrees.
- Mix gluten free flour, baking powder, salt and baking soda together in a bowl.
- Beat softened butter, light brown sugar, granulated sugar, peanut butter and vanilla at medium speed for 3 minutes.
- Add eggs one at a time.
- Scrape often
Using a large spatula fold in:
- 2 cups LoveJoy Gourmet Granola, lightly crushed
- 1 cup cocktail peanuts, roughly chopped
- 1 cup sweetened flaked coconut
- 12 oz milk chocolate chips.
How to Bake It
- Use a 1/2 cup measure to scoop dough on parchment paper 3 inches apart.
- Press the center of each scoop with a fork to flatten slightly
- Bake for 16 – 18 minutes
Cool for 5 minutes on the cookie sheet.
