Fast Forward to 2019. I love experimenting in the kitchen, especially when I need to make a favorite recipe gluten free! VOILA! My Decadent 4 Chocolate layer bar cookie was born. It's still super easy to make, but instead of a graham cracker crust, I use my LoveJoy Gourmet Granola gluten free crust as the base. It’s delicious and brings texture and lots of flavor! Pile on the other layers and you have a decadent dessert & trust me, everyone will ask you for the recipe. As always, let me know what you think.
Ingredients
- 1 cup LoveJoy Gourmet Granola Snacks, crush slightly, leaving some chunks
- ¼ cup sugar
- ¼ tsp cinnamon
- 6 gluten-free shortbread cookies or other gluten-free cookies

4 - 5 tbsps butter, melted, ½ cup pecans, chopped
- ½ cup milk chocolate chips
- ½ cup semi sweet chocolate chips
- ½ cup chopped dark chocolate
- ¼ cup white chocolate chips
- 1 cup sweetened coconut
- 1 cup pecans, chopped
- 1 can sweetened condensed milk (with melted chocolate & small amount of caramel sauce, optional)

How to Make the Crust
- Preheat Oven to 325 degrees.
- Combine granola, cookies, sugar, cinnamon & pecans in a mini food processor or smash with a rolling pin in a plastic bag until you have crumbs with some chunks.
- Transfer to a bowl and stir in the melted butter
- Press the crust mixture evenly into a buttered 13×9 inch pan
- Bake at 350 for 8 minutes until light golden brown. Let cool.
- Turn oven temperature down to 325 degrees.
How to Assemble Layers
- Layer the chocolate over the cooled crust.
- Layer coconut & pecans next.
Now, the magic! Pour 1 can of sweetened condensed milk into a bowl. I usually have chocolate ganache in the fridge for truffles & add a little to the sweetened condensed milk. Or, you can slowly heat some of your favorite chocolate and stir it into the sweetened condensed milk. If you like caramel sauce, add a little of it, as well.
- Drizzle this mixture evenly over the layers making sure to get it on the edges & corners.
Bake at 325 degrees for approximately 23–25 minutes until the edges are light golden brown and the center is “set”.
- Serve warm with ice cream or cool completely before cutting into squares. If you’re in a hurry to eat these treasures, pop into the fridge for about 15 minutes.
