Apple Crisp with Secret Sauce

My love of apple crisp began in 1972 when I married Bill Nelson. I discovered he had a favorite granola-type cereal, and I grew to love it as much as he did. The back of the box had a recipe for Apple Crisp. It didn’t take long for this delicious dessert to become our fave. Over time, I changed it up and used flour & butter instead of the ready-made cereal.
Fast forward to 2003, when I was diagnosed with celiac. No more regular cereal! Now I only make my Apple Crisp using my LoveJoy Granola. I hope you enjoy it as much as we do!
Ingredients
- 6-8 apples, I mix 4 Granny Smith & 2 Pink Ladies aka Cripps Pink
- Fresh lemon juice to keep apples from browning
- 1/3 sugar
- 1 ½ tsp cinnamon
- 1 tbsp cornstarch
- 1/4 tsp salt
- Chopped pecans, optional
- 1 tbsp caramel ice cream topping
- 2 cups LoveJoy Gourmet Granola
- ¼ cup brown sugar

¼ cup high quality gluten free flour
- ¼ cup salted butter, melted

How to make the granola topping for the crisp
In a medium bowl, combine LoveJoy Gourmet Granola, brown sugar, gluten-free flour & 1 tsp. of cinnamon. Stir together well without breaking up too much of the granola chunks.
Melt butter and pour evenly over mixture. Fold butter into granola mixture until evenly coated.
How to make the apple mixture
Peel, core and cut apples into approximately ¼ inch slices.
Sprinkle dry ingredients including the remaining 1/2 tsp. of cinnamon on top of apples and fold with a spatula or your hands. This will help distribute all the ingredients evenly over the apples.
Drizzle the caramel sauce over the apples and mix with hands to coat evenly.
Pour seasoned apples into prepared baking pan. Enamel coated cast iron is great. You can also use a glass 9×9 or equivalent.
Gently press apples down with a spatula to have a smoother top and sprinkle granola topping evenly over the apples.
Bake at 375 for 25-30 minutes. Test doneness of apples with the tip of a paring knife.
If the apples are still firm & you’re concerned topping might get too brown, loosely cover with aluminum foil and bake till the apples are done.
