Great for breakfast or dessert!
I love serving this oatmeal to overnight guests. I’ll have a bowl of freshly whipped cream just in case someone wants to dollop some on the top of their hot oatmeal. Also some warm maple syrup on the side is perfect.

Ingredients

3 cups gluten free oats

½ cup dried cranberries (add blueberries, raisins, whatever you love!)

1 cup of crumbled LoveJoy Gourmet Granola

1 ½ cups milk (I use 2%)

½ cup heavy organic whipping cream

3 ½ tbsps. unsalted butter, melted

2 tbsp. pure maple syrup
-
2 eggs
-
1 ½ tsp. vanilla extract

2 Granny Smith apples, peeled & cut into small cubes. ** Sauté if you have time. See directions included on this page.

How To Make It
Preheat oven to 350. Butter 9-inch baking dish. Layer cubed apples on bottom of dish.
Combine dry ingredients in a bowl; stir to mix.
Whisk eggs in another bowl & add rest of wet ingredients, except butter. Add milk mixture to oats; stir in butter.
Pour the mixture over the cubed apples. Add more chopped pecans to the top of the mixture, optional.
Bake at 350 for approx. 35-40 minutes until the oatmeal is set and golden brown. Let set a couple of minutes.
Serve with a drizzle of warm maple syrup, of course, this is optional, but highly recommended!
How To Saute Apples
2 large Granny Smith apples, peeled & cubed (approx 4 cups).
- Melt 2 tbsps. unsalted butter.
- Add apples and stir. Add 2 tbsps. brown sugar. Add 1 tsp. cinnamon
